Sequential-washed Gesha from Stuardo Coto’s Finca El Mirador in Acatenango, Chimaltenango, grown at 1,500–1,550 masl. This is the elegant one in the lineup: perfume on the nose, then pomegranate and vanilla over a soft, coating body that finishes like milk chocolate and white cake. Roast it light enough to keep the florals; this lot is built for pour-over and a restrained espresso.
